One Pot Roasted Tomato and Herb Soup With Halloumi Toast

Another Tomato soup, but a totally different one!

One Pot Roasted Tomato and Herb Soup With Halloumi Toast


Ingredients:

  • Your choice of tomatoes, about 10, sliced in half

  • 1-2 slices of bacon (optional)

  • 1 onion, quartered

  • 1 head of garlic + 5-6 cloves (you can use less or more)

  • 4-5 sprigs thyme

  • 4-5 sprigs rosemary

  • S+P

  • red pepper flakes, about 3 tbsp (use less or more)

  • smoked paprika

  • 1 cup heavy cream or 1 can coconut cream/ full fat milk

  • 1-2 slices of sourdough bread

  • slices of halloumi

  • olive oil

  • lots of basil for serving

Instructions:

  1. Preheat the oven to 400 degrees F.

  2. Cook the bacon in a large oven safe pot until crispy. If not using bacon, move on to step 3.

  3. In a large oven safe pot, combine the tomatoes, onion, whole head of garlic, the sprigs of rosemary and thyme, olive oil, smoked paprika, red pepper flakes and salt and pepper. Transfer to the oven and roast fo 30-40 minutes or until the tomatoes begin to char.

  4. Remove the garlic cloves from the pot and Use an immersion blender to blend the soup until smooth. stir in the heavy cream or coconut cream.

  5. Meanwhile, make the brie toast. Place the sliced bread on a baking sheet and rub with olive oil place a slice of halloumin top and drizzle with more olive oil. bake until brie is melted.

  6. To serve, ladle the soup into bowls, add some fresh basil, pepper and olive oil. serve with the Halloumi toast and enjoy!
