Herby Wine And Citrus Marinated Turkey Breast

herb + wine + citrus marinated turkey breast


Ingredients:

  • 1 whole turkey breast

  • Whole head of garlic, chopped

  • 1/4 cupfresh sage

  • 1/4 cup fresh thyme

  • 1/4 cup fresh rosemary

  • 1 orange, juice + zest

  • 1 lime juice + zest

  • 1 mandarin

  • S+P, to taste

  • 3-4 tsp dried oregano

  • 3-tsp red chili pepper

  • 2 tsp (or more) smoked paprika

  • 1-2 tsp cumin

  • 1-2 cups white wine

  • 1/3 cup Olive Oil

  • 4-5 tbsp butter, cubed

Instructions:

  1. Add all the marinade ingredients (except the butter) to a bowl.*

  2. Coat the turkey with the marinade then place in the fridge for 2 hours making sure to turn it halfway so the entire turkey breast is marinated.

  3. Preheat oven to 400 F. Line a baking tray with parchment paper, or lightly grease a roasting pan or a dutch oven.

  4. Take the turkey out of the oven and reserve the marinade. Make slits under the turkey and place sliced butter under the skin. Using your hands, add more of the marinade to the turkey.

  5. Roast the turkey breast at 400 for 30 min then lower the temperature to 325 and continue cooking it for an hour (may be 2) or so basting it every 30 minutes. Depending on your oven, time may vary so make sure to check the turkey every 30 minutes after the hour is up.

  6. Remove from the oven and Enjoy!


*Taste the marinade before adding the breast to it.
