Arctic Char and Sweet Potatoes Baked in Parchment Paper
If you’re looking for an easy, delicious and healthy dinner, this parchment baked Arctic Char is just for you. Everything is cooked together in a parchment paper pouch that’s practically mess free and ready in just about 30 minutes.
I saw this Arctic Char on sale at my local Whole Foods and decided to try it out since i’ve never cooked with it. After doing some research I found that its flavor is somewhere between trout and salmon but it tastes just like Salmon, just a tad bit milder.
Arctic Char and Sweet Potatoes Baked in Parchment Paper Pouch
Ingredients
Arctic Char or Salmon
Sweet Potatoes
Diced Pancetta or Bacon
Fresh Basil
Lemon
S&P
Fresh Garlic
Smoked Paprika
Olive Oil
Rosemary, Arugula and Basil
Instructions
Make the Parchment Pouch or simply buy an already made one. Here’s a great tutorial on how to DIY it. I used a sheet pan to measure how big I wanted the pouch, I laid the paper flat on the cookie sheet and then folded that in half.
Preheat the oven to 400 degrees.
Make the Fish Rub by adding chopped garlic,basil,rosemary,lemon juice and zest, olive oil, S&P and smoked paprika to a bowl. rub the salmon with half of the marinade and let it sit for a while.
While the fish is marinating,slice your sweet potatoes very thinly or you can use a mandolin. Toss them with some olive oil, salt and pepper.
Working on one side of the folded parchment, layer the potatoes, then place the seasoned salmon over the potatoes and drizzle with more olive oil top with lemons slices and add the diced pancetta or bacon all over the salmon. Close the parchment packet by folding the other half over the salmon and sealing the edges.
Leave in the Baking Sheet and bake for 15-20 min.
Top with Basil or Arugula, the Marinade and Enjoy!
