Posting what should be a summer recipe during the winter. Ive been wanting to post this recipe for some time now, but the months passed by and when I finally got the chance to post it, its February but thats ok because people eat ice cream during the winter, so why can’t they eat a peach cobbler? :)

This Brown Butter Peach cobbler is layered with peaches (I used fresh but canned will work as well), vanilla, cinnamon, cardamom, thyme (for that little unexpected but very pleasant taste) and brown sugar to. The peaches stay juicy, while the topping is soft and the edges are crisp. Its all about texture and taste with this one!

Top with vanilla ice cream OR Mascarpone.. MMMM

Ingredients

  • 1 1/2 sticks (12 tablespoons) unsalted butter
  • 1 cup all-purpose flour
  • 1 1/2 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon cardamom (optional)
  • 2 teaspoons thyme chopped (optional)
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 tablespoon vanilla
  • 5-6 peaches, sliced (2 cans canned peached)

Instructions

  1. Toss the peaches with 1/2 cup of sugar and 1/2 teaspoon cinnamon and cardamom.
  2. Heat a small to medium pan on medium heat, add the butter to the hot pan, turn down the heat to medium low, add the thyme (if using),continue stirring and let the butter get to a toasty brown (about 5-8 minutes). Once toasted and browned, remove from the heat.
  3. Pour brown butter into a 13x9" baking dish. Meanwhile, Whisk flour, baking powder, salt, and remaining sugar and cinnamon in a medium bowl. Whisk in milk and vanilla.
  4. Layer half of the peaches over the melted butter. Then, pour over the batter on top of the peaches by the ladleful so butter swirls and mixes into batter and peaches. do not stir. Layer the remaining peaches over the batter. Bake 50-55 minutes, until the center is just set and the edges begin to brown.
  5. Serve the cobbler warm or at room temp with ice cream and more peaches. (I sliced an extra peach and tossed it with honey, completely optional)
