One Pot Gnocchi Soup with Kale and Prosciutto
Ingredients:
chicken breasts, cut into cubes(use boneless chicken thighs if you have on hand)
gnocchi of your choice
kale
shallot(s), sliced
6-7 garlic cloves, chopped(use less or more depending on taste)
fresh sage, chopped
fresh rosemary, chopped
fresh thyme, chopped
chicken broth
heavy cream
red pepper flakes
smoked paprika
lemon juice and zest
s+p
prosciutto
gouda cheese, grated
2 tbsp flour+ 2 tbsp water(to thicken the soup)
fresh herbs for serving
Instructions:
Season the chicken with S+P smoked paprika, olive oil and red pepper flakes.
Heat a pot on medium with olive oil and cook the chicken for about 3-5 min. Stir in the chopped sage, garlic and shallots and continue cooking until fragrant (about 3 more minutes).
Add the chicken broth and let it cook, covered for 10 min on medium-low.
The broth should have reduced by almost half—At this point, you’re going to thicken the soup by stirring in the flour+ water mixture.
When the soup has slightly thickened add the heavy cream along with the gnocchi, the shredded gouda, the rest of the herbs and the lemon zest+ juice. Cook for about 5-8 min on medium-low then add the kale along with some of the prosciutto.
Right before serving, you can fry some pieces of garlic and prosciutto to add on top of the soup.
Serve with your favorite bread or by itself and enjoy!
