Pear and Mascarpone Thyme Galette
Ingredients:
your favorite pie recipe
1-2 sprigs thyme, chopped, plus extra for the egg wash
1 stick butter, 8 tablespoons
1/4 cup brown sugar
8 oz mascarpone ( you may need not use all 8 oz)
2 tsp vanilla
Pears – 4-5 medium, sliced
1/3 cup honey or maple syrup
course sugar for sprinkling
vanilla ice cream, for serving (optional)
egg + thyme wash
Instructions:
Make the galette (pie) crust and place it in the fridge until ready to use. Place your sliced pears in a bowl.
Add the butter to a pan on low and let it melt, stir in the maple syrup, vanilla and thyme. Bring to a a boil until it’s thickened. Let it cool until warm to the touch and pour the syrup over the pears, make sure they’re all well coated. Let them sit in the syrup while you work on the galette.
On a lightly floured surface, roll out the dough until its about 1/4 inch thick. Place the galette on a parchment lined baking tray then place it in the fridge for 10 minutes and Preheat the oven to 400 degrees F.
Remove the Galette from the fridge, spread the mascarpone on the galette and spoon the fruit into the middle of the galette making sure you leave enough of the edge to fold the galette in.
Brush the edges of the pastry with egg+ thyme wash (beaten egg with chopped thyme) and sprinkle the galette dough with course sugar (or whatever sugar you have). Before transfering it to the oven, sprinkle brown sugar over the top of the pears and bake the galette for 25 minutes or until the crust is golden. If the edges get get dark—make sure to rotate it in the oven at the halfway mark. Let it cool on the baking sheet until ready to serve.
If you have leftover syrup, drizzle it over the galette before serving. Serve warm or at room temperature with your favorite ice cream and Enjoy!
