Pica Pollo (Dominican Fried Chicken)
Pica Pollo is the authentic Dominican fried chicken, you go to any town and you are sure to find a place that sells it. Now, there’s no right or wrong way in my opinion to cook the chicken because everyone makes it differently. I asked my grandmother and mom what they used for theirs and how they prepared it and although I didn’t have the original ingredients that they asked for so I used some substitutions!
Pica Pollo (Dominican Fried Chicken)
INGREDIENTS:
1 whole chicken, cut into pieces
S&P
sazon completo
adobo
dominican oregano
1 whole head of garlic, peeled
3 limes, juice and zest from 2
whole wheat flour
INSTRUCTIONS
After you’ve cut your chicken in pieces, rinse it under cool water and clean it with lime. Once its done cooking, place it in a bowl
in a pestle and mortar, smash all the garlic cloves from the head and once the garlic has been smashed and form a paste like texture, add 1 tbsp of salt.
Add the garlic paste to the chicken along with the juice and zest from the 2 remaining limes, pepper, dominican oregano and sazon completo. Let it marinade for 30 minutes.
Add your oil to a heavy bottom frying dish.
In shallow bowl, Add the flour and the Adobo, (I used 3 cups of flour and added about 1/4 cup of adobo) and mix well.
Dip the chicken pieces in the flour mixture and shake off the excess, fry until golden brown and cooked through. Make sure that you fry a few pieces at a time to avoid overcrowding the pan.
Enjoy with fried plantains, rice and beans or with fries!!
