Roasted Pepper and Fresh Mozzarella Sandwich
Ingredients:
olive oil
2 whole heads of garlic
1 red pepper
1 yellow pepper
avocado
basil
fresh mozarella
1 baguette or whatever bread your prefer
Instructions:
Slice the top of the garlic to expose the top of the cloves off and discard the papery layers, place it in foil and rub olive oil all over it, roast it in the oven at 400 for 20-30 minutes or until the cloves are lightly browned and feel soft when pressed.S
Next, turn up the oven o 450 and slice the peppers in 4, discarding the seeds place them on a sheet pan a lined with parchment paper ( cut side down) rub olive oil and sprinkle salt on the peppers and roast for 15-20 minutes or until the skins are very dark and have collapsed. (There is no need to rotate or turn the peppers.) Once the skins are blackened remove the peppers from the oven.
Take the garlic cloves out of the skin and place them in a bowl. mash the garlic and drizzle with olive oil and season with a little bit of S +P.
Slice your bread halfway and place it in the oven to toast.
Rub the garlic on both sides of the bread and begin layering the peppers, avocado, fresh mozzarella and basil. I started with the peppers, then the avocado, mozzarella and topped it off with the basil. Sprinkle with some more salt and pepper.
Slice the sandwich in half and serve warm!
