Sheet Pan Whole Chicken Legs with Potatoes and Mushrooms
What’s better than using only one sheet pan for your entire meal? I use my sheet pan at least 3 times a week because its the easiest way to cook and it never fails me. For this dish, if you want to go a bit healthier, sub the potatoes for sweet potatoes or even butternut squash!
Sheet Pan Whole Chicken Legs with Potatoes and Mushrooms
Ingredients
Whole Chicken Legs
Yukon Gold Potatoes cut in half
Crimini Mushrooms (whole or sliced)
Sweet Onion (sliced)
S&P
Garlic Powder
All purpose Latin Seasoning
Smoked Paprika
Olive Oil
Lemon zest and Lemon Juice
Instructions
Preheat the oven to 375 and line a baking sheet with Parchment Paper.
Season the Chicken with S&P, Garlic Powder, Smoked Paprika,All purpose Latin Seasoning,lemon zest, lemon Juice and Olive Oil.
Place the potatoes along with the mushrooms and onion on the sheet pan and season them with salt,pepper,garlic powder and a lot of olive oil.Toss it all together so everything gets coated evenly.
Add the Legs to the sheet pan making sure that they aren’t on top of the potatoes and place in the oven for 30 min-45 min.(cooking time depends on your oven and how big the chicken is)
When its done, sprinkle some parsley on top an enjoy!
